Beet Hummus


Beet Hummus

Beet hummus is my new favorite. It's super healthy and Paleo. I love to eat it with fresh veggies or gluten free toast.


What you'll need:

4-5 medium beets roasted for an hour and skins removed

1-2 cloves garlic minced

1/2 cup tahini

1/2 half fresh lemon or 4 tablespoons lemon juice

1/2 teaspoon cumin

2 tablespoons extra virgin olive oil

1/4 cup chopped fresh parsley

salt


What to do:

In a food processor or Vita Mix add beets, garlic, tahini, lemon and optional spices.

Process until desired consistency. Add salt to taste.

Serve with a healthy drizzle of olive oil and a sprinkle of fresh parsley.
