GF Macaroni & Eggs

 GF Macaroni & Eggs

The Italian Easter Menu is very long. Here's one of many dishes that we make and love. It's fast easy and high in protein.


What you'll need:

On box of GF ziti cooked al dente

3 cups of sauce (Use your judgment here. Use just enough sauce to cover the macaroni)

1/4-1/2 cup Grated Parmesan cheese

Six eggs scrambled

salt and pepper to taste

red pepper flakes


What to do:

In a large pot bring the sauce to a low boil.

Add 1/4 - 1/2 cup cheese to the eggs and salt and pepper to taste. Stir

Add the macaroni to the hot tomato sauce.

Stir and bring back to a low boil.

Add the egg mixture to the hot macaroni and stir.

Let the hot macaroni cook the eggs for about 5 minutes. Watching and adjusting heat so it does not burn or stick.

Remove the macaroni and eggs from the heat and let sit for 5 minutes.


Serve with Parmesan Cheese and red pepper flakes to taste.
