High Protein Gluten Free Pancakes

The best way to start your day is with good protein. Monday through Friday we eat eggs in one way or another. Come the weekend, the kidos want pancakes, waffles and french toast.
Problem: Carbohydrate/sugar/insulin overload.
Solution: GF High Protein Pancakes to the rescue.
This GF All-Purpose Flour Mix made great pancakes.
Here's what you'll need:
2 tablespoon butter or coconut oil
1 Cup of Outrageous All-Purpose Flour Mix
3/4 teaspoon baking soda
1/2 teaspoon salt
4 eggs
1 cup full-fat yogurt
1/4 cup unsweetened apple sauce, orange juice or water (more or less to desired consistency)
Here's what to do:
Heat butter in a large skillet on medium high heat.
Drop batter into hot pan.
Flip pancakes when bubbles form around the edges.
Serve with butter and 100% grade B maple syrup.
