Italian Cauliflower

Here's what you'll need:

1 head of cauliflower, green leaves removed.

1/2 pound of pancetta or bacon diced

28oz can of diced tomatoes

Here's what to do:

In a medium sauce pan on medium heat sauté pancetta or bacon until lightly brown

Add whole cauliflower

Pour in tomatoes

Cover and cook on low medium for 15 minutes or until fork tender.

Remove cauliflower onto plate, cut into quarters and serve with salt and pepper to taste.
