My good friend Jason at TheAdventureDad gave me this fantastic recipe this weekend.


So easy to whip up in the Kitchen Aide mixer or Vita Mix before school/work in the morning and loaded with protein.


Here's what you'll need:

5 eggs

1 1/4 cup milk

7/8 cup flour

1/2 teaspoon salt

1 teaspoon cinnamon

2 teaspoons vanilla

2 tablespoons butter


Here's what to do:

Preheat the oven on 425

Melt 2 tablespoons butter in a 9" stainless steel or cast iron skillet

Swirl the butter up and around the sides of the pan

Mix all the ingredients together in the mixer or blender

Pour the mixture in the skillet and bake for 20 minutes

Serve with berry compote or 100% grade B maple syrup.
