Scrambled Eggs & Potatoes

What you'll need:

3 eggs

2 tablespoons butter

1/4 cup grated Pecorino Romano Cheese

1/2 onion diced

1 potato peeled and sliced

3 tablespoon lard

salt and pepper to taste


What to do:

In a large skillet heat lard on medium heat and saute potatoes until fork tender. Add onions and saute until translucent. Season with salt and pepper and place on a dish. In the same pan heat butter. Add eggs and cheese and stir until cooked to your liking. Serve with salt and pepper to taste.
