Spinach and Goat Cheese Omelet

What you'll need:

3 eggs

2-3 tablespoons butter

1/4 cup cooked spinach

3 tablespoons goat cheese.


What to do:

Heat butter in a large skillet on medium heat.

Add eggs to hot butter.

When edges look dry pull edges in towards center with a fork to cook the wet egg.

When the eggs look almost done add spinach and goat cheese.

Fold eggs over spinach and cheese.

Serve with salt and pepper to taste.
