Summer Quinoa

I adapted this recipe from the original one posted at The Yoga Journal.

Here's what you'll need:

1 cup orange juice

2 cups water

2 pinches of saffron threads crushed

1/4 teaspoon of turmeric

2 cups of sprouted quinoa

2/3 cups raisins or golden raisins

2/3 cups unsulfured apricots sliced thin

1/2 cup slivered almonds

2 tablespoons lemon juice

2 tablespoons olive oil

zest of 1 orange

salt and pepper to taste


Here's what to do:

In a medium pot, combine orange juice, water, saffron and turmeric and bring to a boil.

Add quinoa, lower heat to simmer, cover and simmer for 15 minutes.

Add raisins, apricots, almonds, lemon juice, olive oil and orange zest. Salt and pepper to taste.

Gently toss and serve.


Be in health.
