The Best Tomato Soup EVER

Here's what you'll need:

4 pounds of plum tomatoes, cut in half, ends discarded.

1 red onion sliced peeled and sliced

1 stick of butter cut into thick slices

salt and pepper to taste

basil, dill and chives dried or fresh

Here's what to do:

Heat oven on 350 degrees.

Place tomatoes on a rimmed baking sheet.

Top with butter, onions, salt, pepper and herbs of your choice.

Bake for 30 - 40 minutes or until lightly charred.

Place all the cooked ingredients in a Vita Mix or high speed blender. Leave a space open in the lid for hot steam to release. Blend until smooth. Garnish with chopped parsley.
