Green Goddess Chopped Bean Salad with Blackened Chicken
Ingredients
For the salad:
1 can cannellini beans (or chickpeas), drained & rinsed
1 can kidney beans, drained & rinsed
1 English cucumber, diced
1 red bell pepper, diced
1 cup cherry tomatoes, halved
¼ cup red onion, finely chopped
¼ cup chopped parsley or cilantro
½ head romaine, finely chopped
½ head radicchio or red cabbage, shredded (optional)
For the green goddess dressing:
1 ripe avocado
⅓ cup plain Greek yogurt
¼ cup fresh parsley
¼ cup fresh basil or cilantro
2 tablespoons lemon juice
2 tablespoons olive oil
1 garlic clove
Salt & pepper to taste
Water to thin as needed
For the blackened chicken:
2 large chicken breasts
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon cayenne (optional)
Salt & pepper to taste
Chimichurri Meatballs with Herb Roasted Potatoes & Green Veggies
Ingredients
For the meatballs:
1 lb ground beef or turkey
1 egg
¼ cup breadcrumbs
2 garlic cloves, minced
Salt & pepper
For the chimichurri:
½ cup fresh parsley
¼ cup fresh cilantro
2 garlic cloves
2 tablespoons red wine vinegar
½ teaspoon red pepper flakes
⅓ cup olive oil
Salt to taste
For the sides:
1½ lbs baby potatoes or Yukon Golds, halved
Olive oil, salt, pepper, rosemary or thyme
2 cups broccoli florets (or green beans, zucchini, etc.)
Chicken, Black Bean & Sweet Potato Enchiladas (Freezer)
Ingredients
2 cups cooked shredded chicken
1½ cups black beans (canned or cooked)
2 cups peeled and diced sweet potatoes
1 small red onion, diced
2 cups shredded cheese (Mexican blend or cheddar)
2½ cups enchilada sauce (homemade or store-bought)
8–10 corn or flour tortillas
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon chili powder
Salt & pepper

Ingredients
1 cup black lentils (beluga), rinsed
1 small eggplant, cubed
1 medium yellow onion, chopped
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 tablespoon curry powder
1 teaspoon turmeric
1 teaspoon cumin
1 (14 oz) can diced tomatoes
3 cups vegetable broth or water
1 cup basmati rice
1 tablespoon coconut oil or neutral oil
Salt to taste
Fresh cilantro (for garnish)
