Green Goddess Chopped Bean Salad with Blackened Chicken

Ingredients

For the salad:

  • 1 can cannellini beans (or chickpeas), drained & rinsed

  • 1 can kidney beans, drained & rinsed

  • 1 English cucumber, diced

  • 1 red bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • ¼ cup red onion, finely chopped

  • ¼ cup chopped parsley or cilantro

  • ½ head romaine, finely chopped

  • ½ head radicchio or red cabbage, shredded (optional)


For the green goddess dressing:

  • 1 ripe avocado

  • ⅓ cup plain Greek yogurt

  • ¼ cup fresh parsley

  • ¼ cup fresh basil or cilantro

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 1 garlic clove

  • Salt & pepper to taste

  • Water to thin as needed


For the blackened chicken:

  • 2 large chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon cayenne (optional)

  • Salt & pepper to taste


Chimichurri Meatballs with Herb Roasted Potatoes & Green Veggies


Ingredients

For the meatballs:

  • 1 lb ground beef or turkey

  • 1 egg

  • ¼ cup breadcrumbs

  • 2 garlic cloves, minced

  • Salt & pepper

For the chimichurri:

  • ½ cup fresh parsley

  • ¼ cup fresh cilantro

  • 2 garlic cloves

  • 2 tablespoons red wine vinegar

  • ½ teaspoon red pepper flakes

  • ⅓ cup olive oil

  • Salt to taste

For the sides:

  • 1½ lbs baby potatoes or Yukon Golds, halved

  • Olive oil, salt, pepper, rosemary or thyme

  • 2 cups broccoli florets (or green beans, zucchini, etc.)


Chicken, Black Bean & Sweet Potato Enchiladas (Freezer)


Ingredients

  • 2 cups cooked shredded chicken

  • 1½ cups black beans (canned or cooked)

  • 2 cups peeled and diced sweet potatoes

  • 1 small red onion, diced

  • 2 cups shredded cheese (Mexican blend or cheddar)

  • 2½ cups enchilada sauce (homemade or store-bought)

  • 8–10 corn or flour tortillas

  • 1 tablespoon olive oil

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • Salt & pepper

🍛 4. Black Lentil & Eggplant Dal with Steamed Rice (Freezer)

Ingredients

  • 1 cup black lentils (beluga), rinsed

  • 1 small eggplant, cubed

  • 1 medium yellow onion, chopped

  • 3 cloves garlic, minced

  • 1 tablespoon grated fresh ginger

  • 1 tablespoon curry powder

  • 1 teaspoon turmeric

  • 1 teaspoon cumin

  • 1 (14 oz) can diced tomatoes

  • 3 cups vegetable broth or water

  • 1 cup basmati rice

  • 1 tablespoon coconut oil or neutral oil

  • Salt to taste

  • Fresh cilantro (for garnish)
