Acini di pepe

Acini di pepe are a form of pasta. Their name is Italian for "grains of pepper".


Gluten free? Substitute rice, lentils or potatoes for pasta.


Here's what you'll need:

3-4 chicken backs and 1 dozen chicken wings (and/or 1 whole chicken)

1 tablespoon vinegar

4-5 carrots chopped

4-5 stalks of celery chopped

1 onion chopped

large bag of fresh spinach or 1 bag of frozen spinach thawed and drained

​1 box Acini di pepe


Here's what to do:

Fill a large soup pot with 10 cups cold water, chicken and vinegar (use enough water to cover the chicken by 1 inch).

Let sit for 30 minutes (this pulls out all the minerals from the chicken and will make your soup more nutrient dense.)

Turn the stove top on hight.

Bring the chicken to a boil, then reduce the heat and simmer for 1 hour.

Remove the chicken from the pot and place in a large shallow bowl.

Remove all the meat from the chicken and place aside.

Throw away the skin and bones.

Put the carrots, celery and onions in the hot broth and cook until done to your liking.

In a small pot cook the Acini de pepe and cook according to the package directions.

Strain the Acini de pepe.

Add the chicken, Acini de pepe and spinach to the hot soup.

Salt and pepper to taste.

Serve with Pecorino Romano Cheese


Gluten free option - omit Acini de pepe and use rice, lentils or potatoes.
