Gluten Free Cinnamon Waffles

Here's what you'll need:

  • 2 cups No. 3 Gluten Free Pastry Flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • 1/4 teaspoon nutmeg

  • 1 cup milk (of your choice)

  • 1 cup yogurt (of your choice)

  • 6 tablespoons unsalted butter, melted

  • 3 large eggs

Here's what to do:

  1. Heat waffle iron according to manufacturer’s instructions.

  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. In a large bowl, whisk together the milk, yogurt, butter, and eggs.

  4. Whisk the flour mixture to the wet ingredients until smooth.

  5. For large Belgian waffles, spread 1 cup of the batter nearly to the edges of the waffle iron. For regular waffles, use ½ cup of batter.

  6. Serve with butter, 100% pure maple syrup and optional bananas.
