Nourishing Homemade Chicken Stock: My Go-To Family Recipe for Cold Days

There’s nothing quite like the comforting aroma of homemade chicken stock simmering on the stove. It’s nourishing, versatile, and perfect for a variety of meals. Whether you’re fighting off a cold or just looking for a nutrient-dense addition to your diet, this chicken stock is your go-to remedy.


Why I Love Making Chicken Stock


On a cold winter day, I heat up a pot of this golden elixir and add whatever veggies I have on hand for a quick, nutrient-packed meal. It’s incredibly satisfying to know that I’m feeding my family something wholesome, made from scratch, and loaded with health benefits.


Ingredients


• 1 whole free-range chicken (or 2-3 pounds of bony chicken parts like necks, backs, wings)

• Optional: Chicken feet and head (for extra collagen and nutrients)

• 2 tablespoons vinegar (to help extract minerals from the bones)

• 1 onion, peeled and quartered

• 3 carrots, broken in half

• 2 celery stalks, cut in half

• 1 bulb of garlic, peeled and crushed

• 1 bunch of Italian parsley


Instructions


1. Prepare the Chicken: Place the chicken or chicken parts in a large stockpot. Cover with cold water.

2. Add Vinegar and Rest: Stir in the vinegar and let it sit for 30 minutes. This helps draw out the minerals from the bones.

3. Add Vegetables: Add the onion, carrots, celery, and garlic. (Save the parsley for later.)

4. Bring to a Boil: Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to a gentle simmer.

5. Simmer: Cover and simmer for 6 to 24 hours. The longer it cooks, the more flavorful it will be.

6. Add Parsley: About 10 minutes before the stock is done, add the bunch of parsley for added minerals and flavor.

7. Strain and Store: Strain out the solids and store the stock in glass jars or containers. It will keep in the refrigerator for up to a week or in the freezer for several months.


Tips for the Best Chicken Stock


Use Quality Ingredients: Opt for free-range chicken and organic vegetables for the best flavor and nutrients.

Don’t Skip the Vinegar: It’s essential for extracting all the goodness from the bones.

Customize It: Add your favorite herbs and spices like bay leaves, thyme, or peppercorns to make it your own.


How to Use Your Chicken Stock


Use it as a base for soups, stews, or simply enjoy it on its own with a sprinkle of salt. It’s a comforting and healing addition to any meal!
